Shrikhand

INGREDIENTS
1 kg. thick curd
3/4 cup powdered sugar
a few strands of saffron
1 tablespoon warm milk
2 teaspoons cardamom (elaichi) powder
‘Shrikhand’ (sweet strained yoghurt) is made from curd. Ingredients include strung yogurt.
Hanging yogurt is made by placing the curds on a muslin cloth and applying enough pressure towards the top to strain the water.
The solid mixture that remains is the hung yogurt.
Other ingredients for Shrikhand include
cardamom powder
Powdered sugar
Saffron with a little milk and almonds and very finely chopped track
First we will beat yogurt hanging in a bowl
Add powdered sugar to the bowl, followed by elaichi powder. Mix well.
Now add the saffron milk followed by the chopped almond and tracks. Mix well.
Shrikhand is ready, put it in the fridge to cool down.
Garnish with chopped almonds and pistachios, and serve chilled.
